| all-purpose flour (unsifted): 1 3/4 cups |
| canned pumpkin: 1 cup |
| water: 1/3 cup |
| vanilla extract: 1/2 tsp |
| light brown sugar (unpacked): 3/4 cup |
| ground cloves: 1/4 tsp |
| ground nutmeg: 1/2 tsp |
| ground cinnamon: 1/2 tsp |
| eggs: 2 |
| semisweet chocolate chips (chips): 1/2 cup |
| butterscotch baking morsels: 1/2 cup |
| pecans (chopped): 1/2 cup |
| baking soda: 1 tsp |
| baking powder: 1/4 tsp |
| salt: 1/4 tsp |
Great pumpkin bread recipe
Preheat Oven to 350 degrees
Using butter or vegetable oil grease a bread pan
In a medium size mixing bowl beat eggs until smooth.
Add oil, water, pumpkin, sugar, vanilla, cloves, nutmeg, cinnamon and mix until smooth
In a smaller mixing bowl combine baking soda, baking powder, flour, and salt
Add flour mix to pumpkin mix slowly stirring continuously so as not to spray flour all over the place
Continue mixing until the batter is uniformly consistent
Add chocolate&butterscotch chips, and pecans(These ingredients can be omitted, or substituted with cocoa nibs, raisins, walnuts, dried cranberries, or whatever your imagination thinks would go well w/ pumpkin)
Mix to distribute chips and pecans evenly throughout mixture
Pour batter into greased bread pan
Bake until toothpick comes out clean.
