Preheat the oven to 375°F Lightly butter an 8- X 10-inch baking dish.

Toss sliced peeled peaches with sugar, spices and 2 tablespoons of flour. Put the fruit in the dish, then cover it with the topping. Brush the top with the beaten egg and sprinkle it with sugar for a shiny, sparkly crust. Bake until the fruit is cooked and bubbling around the edges, about 25 minutes. Let the cobbler sit for a while before serving, but serve it warm with cream, yogurt, or ice cream.
