Banana pancakes - nutritious and delicious!
In a large bowl, disolve baking soda in buttermilk. Add flour, eggs butter and salt. Stir lightly. Batter should be streaky and lumpy.
Gently fold in bananas. Drop by spoonfuls onto hot, lightly oiled griddle or skillet. Turn when bubbles begin to break. Cook until golden brown.
Serve with maple syrup, top with chopped pecans and dust with powdered sugar if desired.
Note: Batter will thicken as it sits. If necessary to thin batter, use up to 1/2 cup additional buttermilk, milk, or water.
Makes about 1 1/2 dozen 4-inch pancakes. You could add a little nutmeg, cinnamon, and/or cloves to batter if you wish.
