Beat the sugar and applesauce together.

Add eggs and mashed banana and beat well.

In another bowl combine both flours, baking soda, baking powder and salt. Add this to the banana mixture and mix well.

Pour the batter into a greased and floured 9x5x21/2" loaf pan.

Bake at 350oF for about 1 hour. If a wooden tester inserted into the center of the bread comes out clean the bread is done. Turn the bread out of the loaf pan and allow cake to cool on a wire rack. Wrap the bread in tin foil and store overnight berfore slicing.
