| all-purpose flour (unsifted): 1 Tbl |
| granulated sugar: 1 Tbl |
| salt: 1 tsp (and 1 tsp dry mustard) |
| cayenne pepper: 1/8 tsp (just a dash) |
| eggs: 2 (well beaten) |
| whole milk: 3/4 cup |
| distilled vinegar: 1/3 cup (up to 1/2 cup, heated) |
| salted butter: 1 Tbl |

In top of double boiler, stir together flour, sugar, mustard, salt, cayenne, eggs, and milk. Stir in heated venegar. Place over boiling water and cook, stirring, until thickened (about 10 min). Remove from heat and add butter, stirring until smooth.
If made ahead, cover and refrigerate.
Store for as long as 1 week.
If you prefer a thinner dressing, stir in several tablespoons of juice or milk. If you like a thicker dressing, fold in whipped cream.
Makes abaout 1 1/3 cups.
