There are many creative ways to vary this base recipe for chocolate pie. Check it out!
Place chocolate in the top of a double boiler, allow to melt.
In bowl of food processor fitted with metal blade, place tofu and vanilla. Process until smooth. Add melted chocolate, process until thoroughly combined. Pour into prepared pie shell, sprinkle pecans on top evenly, and refrigerate until chilled and firm.
Whip cream in a chilled bowl until stiff peaks form.
Serve slices of pie topped with whipped cream.
Notes: You can vary this base recipe in many ways. It can be vegan by omitting the cream and otherwise using vegan ingredients.
Try graham cracker or cookie crumb crust. Use a spring form pan instead of a pie pan.
Try peanut butter chips or chocolate mint chips.
Alternate layers of whipped cream and chocolate, and serve in parfait glasses. Or, add the whipped cream to half of the filling and put the lighter layer on top.
Add a spoonful of liquor, coconut milk, or espresso powder to filling.
Stir the nuts into the filling and top with white chocolate shavings or flaked sea salt.
Be creative! Enjoy!
