| red tomatoes (chopped): 2 cups (cut into slices) |

| canned refried beans: 1 lb (hot) |
| vegetable oil: 2 Tbl |
A great recipe for leftover pork roast. (Hint: use leftover meat from the Cranberry Pork Roast recipe in KitchenPC.)
Heat large non-stick skillet. Add 1 T oil at a time, as needed. Add pork and heat quickly. Keep warm and bring it to the table.
Bring remaining ingredients to the table for guests to assemble their own carnitas.
