Sift together flour, sugar, salt, baking powder, and add shortening.

Beat in 2 eggs and flavoring. Beat until very smooth.

Separate remaining eggs. Add yolks to batter, beating well.

Beat the 2 whites stiff and fold inches.

Pour batter in well greased shallow pan about 15 by 10 and spread evenly. Bake at 375 for 15 minutes.

When cake is done, immediately turn cake onto cloth well sprinkled with powdered sugar.

Quickly cut off crisp edges and spread with jam or jelly which has been beaten up to spread easily.

Then roll the cake from one side using the cloth as a pusher. Leave in cloth till cold, at least 1/2 hour. Do not over beat and do not bake more than 15 minutes. This cake can be made the day before and will be fresh.

Note: Other fillings might be vanilla or chocolate custard or one of many pudding mixes. Lining pan with greased wax paper will help in getting cake out without breaking it.
