| white potatoes: 6 whole potatoes |
| onions - red (chopped): 1/4 cup |
| olive oil: 1 Tbl |
| red wine vinegar: 1 Tbl |
| lite mayonnaise: 2 Tbl |
| fresh rosemary: 1 tsp |
| fresh thyme: 1 tsp |
| sea salt: 1/4 tsp |
| black pepper: 1/4 tsp |

Rinse and cut potatoes into chunks. I like potatoes with the skin on. But, if you don’t, you’re more than welcome to peel them first.
Boil potatoes until tender (for me, it took about 10 minutes).
While your potatoes are boiling, chop the red onion into fine pieces.
Combine onion with olive oil, vinegar, mayo, and spices.
By this time, your potatoes might be done. If so, drain and rinse them.
Gently toss or mix potatoes with mayo mixture.
Enjoy…either warm, or cold!
