| canola oil - for salads, woks and light frying: 1/2 cup |
| all-purpose flour (unsifted): 1/2 cup |
| onions: 1 |
| green sweet peppers: 1 whole pepper |
| celery (chopped): 1/2 cup |
| paprika: 2 tsp |
| white potatoes: 8 whole potatoes |
| garlic: 1 clove |
| ham hocks: 1 lb |
| smoked sausage - turkey, pork, and beef: 1 lb |
| sour cream: 1 cup |

In a dutch oven or other large pot, cook the oil and flour, stirring constantly of course, over medium heat until you have a light roux.

About 10 minutes.

Add the onions, celery and paprika, combining well.

Cook until the veggies are soft, 5 minutes or so.

Add all remaining ingredients except sour cream, and simmer over low heat for 2 hours.

Shortly before serving, add the sour cream and simmer until heated thoroughly.

Serve, topped with a little grated cheese if desired.
