1. Thaw turkey, if frozen. Preheat oven to 325 degrees F. In a small bowl combine coriander, paprika, garlic salt, black pepper, and ground chipotle pepper.
2. Rinse turkey; pat dry with paper towels. Skewer turkey neck skin to back. Tuck drumstick ends under the band of skin or tie drumsticks securely to tail. Twist wing tips under the back. Place turkey, breast side up, on a rack in a shallow roasting pan. Rub with oil and spice mixture. Insert a meat thermometer into the center of an inside thigh muscle. Cover turkey loosely with foil.
3. Roast for 2 1/4 hours. Remove foil; cut band of skin or string between drumsticks so thighs will cook evenly. Continue roasting for 30 to 45 minutes more or until the thermometer registers 180 degrees F.
4. Remove turkey from oven. Cover with foil and let stand 15 minutes before carving. Makes 8 to 10 servings.
Turkey Breast Option: Brush a 2 to 2 1/2 -pound turkey breast half with bone with just 2 teaspoons of oil and use 1/2 of the chipotle rub. Place turkey, breast side up, on a rack in a shallow roasting pan. Roast in a 325 degree F. oven for 1 1/4 to 1 1/2 hours or until juices run clear and turkey is no longer pink (170 degrees F). Let stand covered with foil for 10 to 15 minutes before slicing. Makes 6 servings.
