| onions - white (chopped): 1 1/2 cups (chopped) |
| black-eyed peas: 8 oz (soaked overnight) |
| water: 2 cups |
| garlic: 1 clove (chopped) |
| bay leaf: 1 |
| black pepper: 1/2 tsp |
| red pepper flakes: 1/2 tsp (optional) |
| liquid smoke: 1/2 tsp |
| soy sauce: 1 Tbl |
Southern-style, with almost no fat
Drain and rinse soaked black-eyed peas and place them in a large saucepan with all of the ingredients, except for the soy sauce.
Bring to a boil, let simmer for 3 minutes, then turn the heat to low, cover, and simmer for 30-60 minutes, or until the beans are as tender as you like them.
Add soy sauce and stir. Remove the bay leave, and adjust salt to taste. Mash the beans slightly.
