Place baking sheet on bottom rack of oven. Place 6 cup popover pan on rack above baking sheet and heat oven to 400 degrees.

Combine flour and salt and sift onto piece of wax or parchment paper.

Warm milk in small saucepan over medium high heat until bubbles form around edges.

Whisk eggs together in a large bowl until frothy, 2-3 minutes. Slowly add eggs to warm milk, whisking constantly. Gradually add flour mixture, whisking constantly until smooth.

Remove popover pan from over. Use paper towel or pastry brush to carefully and completely butter inside of cups (can also use bacon grease, or fat drippings from roasted meat).

Fill cups 3/4 full with popver batter,. Sprinkle each with 1/2 oz of cheese.

Bake for 15 minutes; rotate pan. Bake additional 30 minutes, or until browned and puffed without opening over door.

Remove pan from oven and invert to remove popovers. Serve immediately.

Reheat popover pan in over, re-greasing as necessary, and bake remaining popovers as above.
