Preheat oven to 400°F Put 10" x 14" pan (with lip) in oven.

Beat eggs, flour, milk, and salt.

Remove pan from oven, put butter in pan and tilt to coat bottom and sides of pan with butter.

Put sliced apples in pan and spread out to cover pan bottom.

Pour batter over apples very slowly and evenly, trying to cover all of the apples with some batter.

Sprinkle with cinnamon-sugar mixture.

Bake 20-25 min at 400°F.

Remove from oven, cut into 8 or 10 slices, and transfer to plates with broad spatula.

My grandmother likes hers sprinkled with lemon juice and dusted with powdered sugar. I think it's good both ways. It's also good cold.
