Preheat the oven to 350°F.

Wash dry and core the apples. If necessary, cut a slice off the bottom of each apple so it stands up.

Place the apples in a greased ovenproof dish, dot with butter, sprinkle with 3 teaspoons of the sugar and bake for 20 minutes.

Meanwhile, whisk the egg whites with the remaining sugar until very stiff.

Fill the apples with the apricot preserves, pour 1 tbsp of Cointreau over each apple and top with the egg white.

Return to the oven until golden brown. Serve immediately.
