Put flour in a food processor or medium size bowl. Add shortening and pulse 5-6 times in food processor, if using, or cut in with a pastry blender or by hand until the mixture resembles coarse crumbs. Remove from food processor, if using, and place in bowl.
Drizzle 3 tablespoons ice water over flour. Mix in until moistened, adding more water if necessary to make the dough come together.
Pat dough into a ball. Place on lightly floured wax paper and lightly flour top of dough ball as well. Place another sheet of wax paper over top and roll out dough to desired size. Place crust in pie plate, fill and bake.
