| walnuts (chopped): 1/4 cup (ground finely in a blender or food processor) |
| brown rice flour: 1 3/4 cups |
| arrowroot flour: 1/2 cup |
| baking soda: 2 tsp |
| salt: 1/4 tsp |
| vanilla extract: 1 tsp |
| walnuts (chopped): 1/2 cup |
| bananas (mashed): 1 1/2 cups |
| safflower oil: 1/4 cup |
| egg substitute: 1/2 cup |
| unsweetened apple juice concentrate: 6 Tbl |
Preheat over to 350 degrees. Mix finely ground walnuts with flour arrowroot, baking soda and salt in a large bowl.
Stir in the chopped walnuts. In a separate bowl, mix together the banana, oil, apple juice, egg replacer, lemon and vanilla. Add to the flour mixture and stir until just moistened. Do not over mix.
Pour into a greased 9x5” loaf pan and bake for 55-60 minutes or until cake tester inserted in the middle comes out clean.
Cool in pan for 10 minutes, then remove from pan and cool on wire rack.
