Preheat oven to 425 degrees.

Sift flour and salt. Cut in 3 tablespoons of shortening until the mixture looks like corn meal.

Cut in the rest of the shortening until the particles are the size of small peas.

Add cold water by the tablespoon, mixing with a fork, until the dough forms a ball.

Roll the dough out on lightly floured board. Dough should be 1/4-inch thick and 6 inches square.

Sprinkle grated cheese (2 tablespoons) and 1/4 teaspoon of paprika on dough.

Fold the square in half, pinch the edges together and roll out again.

Sprinkle with 2 tablespoons grated cheese and 1/4 teaspoon paprika. Fold; repeat with grated cheese and paprika two more times.

Roll dough to 1/4-inch thickness. Cut into strips 1/2-inch wide and 3 or 4 inches in length.

Bake on ungreased cookie sheet about 10 minutes or until cheese straws are golden brown.
