In a large bowl, make a well with the semolina. Add the egg whites and work in well. Add the water and mix into a soft dough. Work in excess flour until it is dry and stiff, about 10 minutes. Place dough in a plastic bag and let it rest in the refrigerator for at least 1 hour. 6-24 hours is better. This will keep in the refrigerator at least one week.

When ready to make pasta, take a small portion of the dough. Run it through a pasta machine or Kitchen Aid with pasta attachment. Run it through until it gets to one or two on the machine. Let it hang to dry for 30-60 minutes and it is ready to be cooked. You can also dry and store in freezer bags. Cook in simmering water for approximately 6-8 minute.
