Place butter in 3 or 4 quart round or oval shallow baking dish (a 9" glass pie pan is good) and set oven to 425 degrees.
In blender (or using an electric mixer), mix eggs at high speed until well blended. Add milk and flour and mix for 1 minute. Remove pan from oven when butter is melted and spread it around to cover bottom of pan. Quickly pour in batter, return pan to oven Bake
for 20-25min until pancake is puffy and golden brown.
Cut into wedges and serve immediately. Serve with powdered sugar, lemon wedges. Also good with syrup, honey or sliced fruit. You may cut the recipe in half or double it, however it may take a little longer to cook for the larger recipe.
You can place thin sliced apples in the pan with some sugar and cinnamon along with the butter. Proceed as directed. Also delicious!
