| macaroni (small shells): 1/2 cup |
| whole apples: 1 (large) |
| lemon juice: 2 1/2 Tbl |
| celery (chopped): 1 cup |
| golden seedless raisins (packed): 1/2 cup (or fresh grapes) |
| green onions - spring or scallion (chopped): 1/4 cup (use green onions) |
| canned white tuna: 7 oz (drained) |
| lite mayonnaise: 1/2 cup |
| Dijon mustard: 1 tsp |
| curry powder: 1 1/2 tsp |
| salt: 1 dash |
| almonds (sliced): 1/3 cup |
| butterhead lettuce: 2 leaves (or other type lettuce) |

Cook macaroni as directed on package; drain and chill.
Dice apple; in a salad bowl, mix apple with lemon juice until coated. Add celery, raisins (or grapes), onion, and macaroni. Add tuna, broken in chunks.
Combine mayonnaise, mustard, and curry powder. Mix gently into salad. Add salt to taste.
Cover and shill up to 2 hours.
Mix half the almonds (toasted if desired) into salad. Serve on two lettuce lined plates. Sprinkle top with remaining almonds.
Makes 2 servings.
This salad is good with fresh albacore tuna (cooked, then chilled). It is also good with salmon (fresh or canned) without the curry powder.
