| olive oil: 1 Tbl |
| chicken breasts: 1 lb (cooked, boneless, skinless, and diced) |
| garlic (crushed): 2 tsp (minced) |
| sun-dried tomatoes: 3 oz (diced) |
| chicken broth: 1 cup (low sodium) |
| fresh basil (chopped): 2 Tbl |
| black pepper: 1/8 tsp |
| chicken flavored ramen noodles: 6 oz (2 packages plus one seasoning packet) |
You can use chicken or pork
1. Heat oil in a skillet; add chicken, garlic, and tomatoes. Add some fresh, diced tomatoes if desired. Saute for a few minutes. Then add the broth, flavor packet, basil, and pepper. Cook over high heat about 5 minutes to reduce liquid by about half.
Serve over warm noodles, or toss in pan with noodles.
2. Cook noodles 3 minutes in boiling water. Drain, cover and keep warm until ready to serve.
