| vegetable oil: 2 tsp |
| chicken breasts: 3 breasts (skinless, boneless, cut in pieces) |
| cornstarch: 1 Tbl |
| granulated sugar: 1 Tbl |
| dried marjoram: 1/4 tsp |
| salt: 1 dash |
| onion powder: 1/8 tsp |
| orange juice: 1 1/4 cups |
| orange peel: 1 Tbl (grated) |
Spray non-stick skillet with PAM, add oil and heat till hot over med-high heat. Cook breasts till well browned.
In small bowl, mix cornstarch, sugar, marjoram, salt and onion powder. Gradually stir in o.j. until smooth and pour over chicken.
Cover and simmer 15-20 min. or until chicken is no longer pink. Turn chicken once halfway through cooking and stir occasionally.
Sprinkle with orange peel(toasted coconut and/or almonds is nice also).
Serve over white rice if desired.
